Hi Andrew,
The NRRD export crash is a known bug in v2.1.2 which will be fixed in an upcoming release that we expect to deploy in the next week or so. In the meanwhile, you can use v2.1.1 which does not have this bug.
For the Windows problem, it's possible that it's a graphics problem. What graphics card is in the machine you were running on? Also, it would be helpful for us to see the program log: look for Seg3D log files under the user directory for the account you used to run the software, in the AppData/Local/Seg3D folder.

Unfortunately, we have run into a few issues running the software (v2.1.2, on Windows 7 x64). Namely, I cannot get the x64 program to run at all (it acts like it is loading when you click on the icon, but nothing happens and the processes close silently) and the 32-bit version crashes whenever we try to export a multiple label segmentation to NRRD. Any pointers would be greatly appreciated.
